Hi Nan,Yes, I definitely think you could make that work, but it might take some experimenting to get the flour proportions right (since almond and coconut are used in very different proportions in recipes--usually a about 1:3 ration of coconut flour to almond flour (ie., if a recipe calls for 1/3 cup coconut flour, you would need 1 cup almond flour to replace it).
